Roasted Mushrooms with Bacon

Ingredients:

1 cup crimini mushrooms, sliced

1 cup shiitake mushrooms, sliced

1 cup seasonal mushrooms of your choice, sliced

5 bacon slices, cooked, chopped (more is always better!)

2 cloves garlic, minced

1/4 cup ghee or melted coconut oil

1/4 cup fresh parsley, minced

Celtic sea salt and freshly ground black pepper

 

Instructions:

Preheat oven to 357 F.

In a bowl, combine all ingredients (except parsley) and mix thoroughly. Season generously to taste.

Place in a small baking dish and put in preheated oven. Bake for 18-20 minutes.

Serve sprinkled with fresh parsley.
