Flourless Pumpkin Cookies


5 oz. cashew butter

1/3 cup pumpkin puree

1 tablespoon pure maple syrup

1/4 teaspoon pumpkin pie spice



Preheat oven to 350 degrees F. Place all ingredients in a food processor and blend until well combined. Using heaping tablespoons, divide batter into 6 circles on a parchment paper-lined baking sheet. Bake for 18-20 minutes or until bottoms are golden brown.
