Paleo Snickerdoodles

Ingredients:

2 cups almond flour

1/8 teaspoon sea salt

1/4 teaspoon baking soda

4-5 tablespoons coconut oil, melted

1/4 cup organic honey

1 tablespoon vanilla extract

Ingredients for coating:

2-3 tablespoons coconut crystals

2-3 tablespoons cinnamon

 

Instructions:

Preheat oven to 350 degrees F. Mix all the dry ingredients, then mix in all the wet ingredients. Using a small spoon, take 1'' round balls of dough and roll them in the coating. Place on a cookie sheet and flatten. Bake for 7-8 minutes. Allow to cool on pan; they will firm up to the perfect texture. Enjoy!
