Fiesta Avocado Chicken Salad (No mayo, No dairy)


1 avocado

2 cups cooked chicken such as a rotisserie, shredded

½ red bell pepper, finely diced

¼ cup fresh cilantro, roughly chopped

2 scallions, thinly sliced (or 2 T finely diced red onion)

Juice of one lime

¼ teaspoon cumin

¼ teaspoon smoked paprika

1 pinch cayenne pepper

Celtic Sea salt to taste

Black pepper to taste



  1. Mash the avocado in a medium bowl with a fork.
  2. Mix the remaining ingredients with the avocado.
  3. Serve on lettuce wraps or a bed of greens.
